With Spring in full swing, it’s time to get the BBQ out and start grilling. And one of my favorite recipes for the BBQ is my Dad’s marinated lamb chops. My Dad has always been the cook in the house and I have to say that many of our meals at the dinner table growing up are still some of my favorites. And his marinated lamb chops are certainly one of them, especially on a sunny day in the back yard.
What goes into the marinade is so fresh and bright; it’s perfect for Spring. With all the fresh dill, you’ll want to wave your nose over the marinade just to take in the fragrance. And though we traditionally use lamb chops, other cuts of lamb will work with this recipe as well. Marinate for at least a couple of hours to overnight and grill them till medium-rare. They also go particularly well with our Three Coins Syrah.
Grilled Lamb Chop Marinade: (For about 6 lamb chops)
- ½ cup olive oil
- ¼ cup soy sauce
- 4 tablespoons of white vinegar
- 1 small chopped white onion
- 1 tablespoon of chopped garlic
- A couple shakes of Tabasco sauce
- A large handful of chopped fresh dill
- Freshly ground pepper
